It’s been a long week three. I sit here in my pyjamas writing this blog post with a head cold like no other and a runny nose that is not letting up. This week started out strong. I kept up with my nutrition and hydration. Got exercise and stretching in anywhere that I could but it soon came to a full stop. In the last two days, I’ve been hit with this virus of some sort. It started out with a sore throat and transformed into a headcold and fever within 12 hours. I didn’t feel it coming at all. And that’s not all… After being thrown into sickness, I’ve had little to no energy for anything else. I am grappling with trying so hard to stay with this challenge, but my body keeps saying no, no, no. And so naturally, I listened to my body first before anything and slept. Slept a lot! My body was fully immersed in laying down. Luckily, I had help of my family. My brother and his family took Marcus for a day to hang out, and treated him to the movies! It was tough getting him to leave my side, but afterall, it was exactly the break that he and I needed. My parents took care of both kids while I slept my sickness off yesterday. Had they not helped, I would be even more miserable right now. It’s been a rough few days to say the least, but I have more incentive now to get better. There are five more weeks left to this challenge. I feel a great desire to get up and get better! Rest is what I chose for myself this week and now all I wanna do is get better and crush this challenge! Thanks for all the well wishes everyone! I look forward to my next update in seven days!
Here is my next challenge recipe to share with you all! These oats are fantastic for that grab and go breakfast! I split this whole crock pot of oats into 3/4 to one cup servings for breakfast! Feel free to switch your toppings up or the fruit that you put in to it! This is a “can’t go wrong” recipe!
Crock Pot Steel Cut Oats
First! Spray or rub your crock pot with butter, or olive oil, the cooked oats can stick to the pot really well!
– two cups steel cut oats
– 8 cups water
– 1 to 1 and 1/2 cans of whole fat coconut milk
– 2 table spoons of vanilla extract
– 2 -3 whisked whole eggs
– 1 whole papaya ( peeled, cored, and cut into cubes)
– 2 bananas smashed
– 1/2 cup chopped pitted dates
– pour all of your ingredients in the crock pot
– stir it all up
– set the crock pot to 8 hours on low (overnight is best)
Then wake up to a delicious pot of oats! Be sure to stir the oats up as a lot of fluid tends to pool at the top. Split up and batch into your portions and eat healthy for breakfast for the week!
Suggested topping: chopped fresh fruit, coconut flakes, slivered almonds, pumpkin seeds. YUM! Enjoy!
